ASUS uses a modified version of the American Megatrends AMIBIOS. The main menu is split into Main, Ai Tweaker, Advanced, Power, Tools and Boot. The Main menu is where the Time, Date, Drives detected, Storage configuration and System Information is located. Storage Configuration is where you would set your drives to RAID.
Advanced is where the CPU configuration, Chipset, Onboard devices and USB devices lay. The CPU Configuration menu is where you enable or disable the various CPU features like Virtualization, C1E and Cool'n'Quiet. The Chipset menu is where you change the settings for the North Bridge and ECC memory. The Onboard devices menu is where you enable the onboard audio, LAN etc. Ai Tweaker is where the majority of the overclocking is done.

In overclocking the ASUS M4A79 Deluxe, I used both ASUS's Ai Suite and AMD's Overdrive utility. The overdrive utility allowed the CPU to overclock to 3.3GHz without issue. Using ASUS's TurboV utility, I was able to overclock to 3.6GHz 100% stable. The TurboV utility has several presets including the Jet Plane (16.5x 206MHz), the Rocket (210MHz 17x). If you want to overclock higher use AMD's Overdrive or manual overclocking. Here's a chart with the various overclocking settings:
