Gigabyte uses a modified version of the Phoenix Award BIOS popular among motherboard manufacturers. The main menu is split into Motherboard Intelligent Tweaker (M.I.T.), Standard CMOS Features, Advanced BIOS Features, Integrated Peripherals, Power Management Setup, PC Health Status and Security Chip Configuration. The overclocking and tweaking is mostly done in the M.I.T. area of the board.

Standard CMOS Features is where the drives are detected, the Date and Time set. Advanced BIOS Features is where the Boot Priority, the Init Display First, and the Full Screen logo are set. Integrated Peripherals is where you would set the SATA/USB, audio, LAN, USB keyboard and mouse are set. Here is also where you set your RAID status to. Power management is where the power options are.
The options for overclocking are so varied I put a table together to show them off. One thing to note I was able to overclock the Core i7 920 to 3.8GHz from the default 2.66GHz clock speed without changing voltages and upping the Base Clock only to 180MHz instead of the 133MHz default.
