For pure performance the GTX590, for about every other benchmark, price/performance ratio, heat, power consumption the HD7970 is the better deal. The HD7970 is a single-GPU card, the GTX590 is a dula-GPU card. Make sure your games are knowing what to do with the second GPU...
If you feel like spending $200 extra for a few more FPS, be my guest.
Second edit: maybe you should wait out for the HD7990 that also being a dual-GPU card that is a FAIR comparison to the GTX590.
