Probably not that you could tell. If you benchmarked them you might find some numerical differences but, otherwise, I think all you'll notice is that XP crashes a lot less.

both win2k and XP have proven reliable when fed the proper hardware to run on. If you system is cr*ppy it won't matter what OS you use, it will still crash a lot.

I think evasive meant that even XP will crash if the hardware is unstable; if your hardware is stable, your system should be just fine with XP.

oh.. well this runs 98 blazing fast
crashes sometimes, but thats pretty alright.
this hardware is extremely stable

Then make a final check to see if eveything is supported under XP (more things you can do section), backup your data and go ahead.
