Oil is not as good as a cooling medium as water, hence why cars use water in their cooling system. Oil has a lower specific heat capacity and is harder to pump.

I threw a motherboard in oil a few years ago, post is somewhere on this forum :) I used engine oil though as it has a higher dielectric strength. If one wanted to cool the computer to ultra low temperatures I decided that DOT 5 brake fluid would be a good medium to use.
