When I share folders on a LAN, are they accessible from the internet, or open to any kind of security threats from the internet? (Apart from the threats that already exist without actually sharing the folders over a network).

If you are using some kind of hardware router, you are better off then if its a switch or hub in place.
Generally its difficult for people to see your files when connected, but if they were to find some way to attach to your internal network, they could view your files.

But in order for that to happen, you have to be advertising some kind of service they could exploit - such as FTP, HTTP, etc.
There are virus/trogan/spyware programs designed to do this though.
