I know for sure that DOS is inherently unsafe for general public use because of its capability to interface directly and manipulate basic system parameters. I say go with Win 7 on all three machines for improve performance and yes even over XP. I would add if you plan on experimenting with new top of line items such touchscreen monitor now or in the near future, then Win 7 all the way.
